The experience continues with a blue shrimp tartare cooked sous-vide, accompanied by green tomato gel and a lemon and basil sorbet, where freshness and citrus notes create a delicate contrast.


The journey also includes a fennel and cauliflower “false risotto” presented in three textures, followed by foie gras with onion and berry jam, paired with creamy basil, matcha tea, verbena oil, and crispy focaccia.


Main courses include sous-vide totoaba served with parsnip purée, truffled spinach, and prosecco sauce, as well as duck magret with creamy truffle gnocchi, port wine sauce, foie gras, and a delicate apple purée.
